Khorasan wheat is a delicate cereal that requires fertile soils and a warm climate to express a satisfactory growth, otherwise the yields are generally low.
It has always been cultivated in the Mediterranean area, especially in North Africa, Spain and Italy.
The cultivated areas where today it best expresses its characteristics are, in Italy, in particular in the regions of Sicily and Puglia.

Alce Nero organic khorasan wheat wholemeal penne are produced through a process that lasts 3 -4 days. The slowness of processing is the secret to obtain a more resistant pasta that holds better cooking. The dough is passed through dies which, in addition to giving them a rough surface, determine their shape.
The drying takes place in the static cells in which the traditional process is reproduced: the feathers are dried at low temperatures, below 50Â ° C, for a period of about 50 hours.
